While driving home from dinner one night Dan and I found ourselves randomly discussing produce that most people think are vegetables but are actually fruit and vice versa. Totally normal conversation for us that started out by talking about pumpkin and ended with some Googling. Incidentally pumpkin is a fruit (like all squashes), as are cucumbers, and eggplant. It all makes sense when you think about it. If something has a stalk or grows in the ground or grows on a vine or has seeds. But there is a lot of produce that we never really consume in its natural form, so a lot of us make the wrong assumption about fruit vs. veg.
Take rhubarb for example. It has a stalk! So it’s obviously a vegetable but I’m pretty sure people don’t think of it like that because it’s always paired with fruit. Strawberry rhubarb pie is a fruit and vegetable pie. Crazy right? Now that we have that out of the way, let’s discuss rhubarb. Poach, roast, bake and couple this stalk with something sweet and it becomes this perfectly tart, delicious thing of beauty. Hence, a very good ingredient for dessert which is exactly why I’m sharing some lovely rhubarb recipes that go beyond the classic strawberry rhubarb pie. Give rhubarb a little more love. It’s in season so better try it while it’s at its peak.

Blueberry Rhubarb Deep Dish Pie | Desserts for Breakfast – Look at that glorious crust. What a thing of beauty. But then you have the inside which is so juicy looking. In our house this would definitely be eaten with breakfast.
Rhubarb Semifreddo Ice Cream Sandwiches | Food 52 – Kinda weird sounding, right? And yet, not at all. Ginger and rhubarb are often paired together so these brown butter ginger cookies with rhubarb semifreddo filling sound lip licking good.
Rhubarb Tart | The Naked Fig – Is there a more gorgeous way to present rhubarb? This is pure eye candy. Delicious eye candy made with coconut cream and dates but really I have never seen such a beautiful array of pink.
Rhubarb, Lime and Coconut Slice | Gourmet Traveller – Rhubarb lime jam and coconut meringue. I have no idea what this would taste like but I’m 100% down to try it. Yummy ingredients and it looks pretty. Done.
Rhubarb Sorbet | Hint of Vanilla – This sounds so refreshing and it’s such a wonderful color! It’s basically rhubarb and sugar. Perfect for those who prefer their dessert less on the sweet side. The author also suggests making a sorbet float with champagne. Heart eyes all around.
