It’s been the summer of burgers, but I for one am happy to take a break from beef to welcome salad and pseudo healthy food into my life while summer’s yummy bounty of fresh fruit and veg is still available. Because let’s be real, fall and winter salads are nowhere near as appealing. But when the sun is shining, bring on the salad. I’m not usually into the idea of salad, but I’m just so pub-fooded out that eating something fresh and clean sounds amazing.
Dan always craves salad, and would eat a bowl of greens with balsamic dressing for dinner every night if he could. That’s a little too simple for me. Side salads have their place, you know, among big bowlfuls of spaghetti, but a serious salad is about showcasing multiple ingredients, and that’s what I’m most excited about in summer. Give me a salad with some oomph! Some personality! And a range of flavor, because this girl gets bored easily, especially if she has to eat the same salad dressing every night of the week. Thankfully there’s an internet full of possibilities that I can just save to my eating board on Pinterest for later. Here are the summer salads that are at the top of my list.
Mangiona W/ Caitlin Levin #29: Crunchy Greek Salad | The Jungalow – This has been my go-to summer salad this year. It’s crazy delicious and has made me a kale salad convert. It’s smooth, salty, savory, and sweet thanks to fresh and juicy tomatoes.
Fig, Prosciutto and Burrata Cheese Salad | Just a Taste – Yes. That’s all I have to say about this one. It’s especially scrumptious with the utterly indulgent figs, prosciutto and oh my gosh burrata.
Tomato Carpaccio | Jamie Oliver – More cheese!! Ok, this is a spin on the regular tomato, basil, mozzarella salad with insane flavor. The insane flavor component? Raspberries. A little dash of tartness to your classic Caprese.
The Best Kale Salad Ever | The Coveteur – Like I said, kale is starting to become my go-to green for salads now. Never thought THAT would happen but this simple green salad packs a tasty punch with pinenuts, currants, and my personal favorite pecorino.
Summer Citrus Salad Recipe | Design Love Fest – This salad is the perfect blend of fresh citrus, earthy beets, and aromatic crunchy fennel. Bright, refreshing, and so colorful!
