The last thing you probably want to think about after Super Bowl weekend is food, right? Especially not dessert! Well, too bad because it’s time to talk sweets. Come on, it’s Valentine’s Day month so everything sugary and yummy and decadent needs to go in your mouth. Is that so wrong? I implore you to treat yo’ self to dessert this month. This is the last good holiday until 4th of July (no offense Easter) so get your sweets on.
Since I already wrote about chocolate desserts last February, I decided that decadent raspberry desserts were perfectly festive for this year. These need to be desserts that you wouldn’t necessarily decide to make on an every day basis. Like brownies or cookies. These treats need to be a little upscale, a little bakery style, and definitely decadent. But it’s Valentine’s Day, so you want these dessert to look amazing too. If you tackle one of the desserts below, you’re not only trying to induce a satisfying food coma, you’re trying to visually show off. What’s the point of making something so beautiful if you don’t have an appreciative audience? These babies look so good they could even be presents themselves. Like heyyy, I made you some éclairs. Boom. Queue Marvin Gaye.

Dark Chocolate & Raspberry Buttercream Cake with Ganache Drizzle | Sweetapolita – This cake is so pretty that it looks fake! But the inside looks just as good and yummy with toasted marshmallow filling and raspberry buttercream. Just look at those lovely raspberries floating in the buttercream.
Almond Crepe Cake with Raspberry-Rose Cream | Milly’s Kitchen – Crepe cakes are for the cream lovers out there. But what makes a good crepe cake is a lightness in each layer, and this has exactly that, with a little bit of rose and lime in the raspberry cream for refreshing brightness.
Eton Mess Layer Cake | Maya Loves Pretty – This look scrumptious! Crunchy meringue paired with cream, raspberries, and salted caramel. An absolutely messy, sticky, sweet dessert for when you really need a party in your mouth.
Hazelnut & Raspberry Éclairs | Camille Styles – Éclairs! Éclairs feel so fancy, to the point where I thought I could never make them myself but this recipe looks fairly easy. Fill ’em with raspberry cream and cover them with ganache and either raspberries or chopped hazelnuts. Mmm yes.
