Come summertime Pinterest will be abound with salads but yo it’s still only February! What do you do in winter when you’re craving a really good salad? Your options likely feel limited. During the lovely sunny months fruit and vegetable options are abundant but in winter not so much. As inconvenient as it is, I tend to want what I can’t have, so once winter hits I start craving cold, refreshing, healthy food. It’s in the coldest months that I’m like dang I really want a salad. And as much as I love roasted vegetables in a kale salad (they’re alright), I want variety and like to trick myself into thinking that warmer days are near by munching on a salad like the ones listed below. I promise they’ll help you hold out (and eat healthy) until spring.
