My boyfriend Dan and I are usually a chocolate bar after dinner type couple. But it’s summertime and lately I’ve been craving something different, something that fits wonderfully as a cooldown treat when we’re sitting out on our balcony after dinner in the late afternoon sun – popsicles! I haven’t had a popsicle in so long but the weather was so beautiful (and hot!) that chocolate just didn’t sound refreshing enough as a dessert option. Dan isn’t a popsicle fan and has been trying to woo me with ice cream sandwiches. Ice cream obviously is a great summertime option but yesterday I decided I really needed to satisfy this craving and bought some tropical flavored and lime flavored popsicles. I’m sure both flavors will be delicious and perfect on a hot day but I’d really like to make some homemade ones. Pinterest is a ridiculously fantastic source for popsicle recipes, especially boozy ones, so I went on there and scoured for inspiration. Plus, making things yourself is always more satisfying cause you know what exactly you’re eating and you get to make whatever flavor suits your fancy.
Dulche de Leche Lemon Popsicles | Fit Fun Delish – An interesting combo that I’ve never heard of before but I love lemon so these popsicle sound both refreshing and creamy.
Mint Chocolate Cheesecake Popsicles | Good Life Eats – Ugh look at how good that looks! This recipe takes the after dinner mint to a whole new level as it calls for Andes mints.
Watermelon and Blackberry Margarita Popsicles | Bakers-Royale – Watermelon, blackberry, limeade, tequila, and triple sec. Oooh baby I just got chills.
French 75 Popsicles | Reclaiming Provincial – It has champagne! Champagne popsicles! What else needs to be said?
Red, White, and Blue Popsicles | Spoonful – Yogurt is definitely a healthier choice than ice cream and these are some pretty looking pops.
Cucumber Lime Popsicles | Ambrosia Baking – Lime is the best summer refresher (ok lemon too) so I had to put in a lime popsicle recipe for you.
