As much as we don’t want to admit it, fall weather is slowly creeping up on us. Our beloved sunny days will be a thing of the past and here in the PNW we’re about to get our fair share of rainy days. I love fall. I really do. But I am not ready to say goodbye to sunshine. Rain, rain, go away! Do I sound glum? The one thing the cooler weather has going for it are cozy eats, like soup. So while I’ll miss the shit outta summer, I’m excited for hearty fall soups.
I tend to get very festive this time of year, discussing yummy sweets (pies, apple recipes) and cocktails (whiskey, fall focused) but I haven’t talked much about food-food during the autumnal season. Lunch, appetizers, dinner, this is when things become very hearty and warm. Your BBQ cravings subside, replaced by a desire for things like tomato soup and grilled cheese. While I love me a tomato soup and sandwich combination, or even a classy butternut squash soup with crispy sage, it’s time to think outside of the box. 10 Comforting Fall Soups
This is the soup that reminds me most of growing up. On rainy days my mom would make vegetable soup and we’d eat it throughout the week. But I love the idea of parmesan toasts with a flavorful veggie soup.
A classic. This soup consists of onions, carrots, celery, kale, tomatoes and cannellini beans. It’s incredibly simple, but the addition of ingredients like pancetta, a parmesan rind, and finishing oil really makes this soup staple sing.
I almost saved this for a pumpkin related post but there are plenty of pumpkin recipes to go around. What says fall more than a hearty pumpkin soup made with pumpkin beer?
Good potato soup doesn’t get enough credit. This potato, garlic, leek soup sounds luxurious. The addition of pancetta breadcrumbs and extra crème fraîche makes it really special. Let’s be honest, pancetta makes everything better.
I have to admit, I was drawn in by the apple, gruyere and sage muffins, but the soup paired with these muffins sounds equally delicious. Leek, butternut squash, and potato soup. Perfect for fall.
I’ve never made miso soup before but this recipe looks amazing! Making this soup would be incredibly satisfying and you might end up with a regular craving for it. Soba noodles, spices, shiitake mushrooms, dark leafy greens. Yum.
This hearty soup is a sure winner. You know those especially cold nights when you’re craving something comforting with some weight to it. Who doesn’t love a healthy lentil soup topped with shaved Parmigiano-Reggiano?
As much as we all adore traditional tomato soup, this creamy soup featuring sundried tomatoes sounds so full of flavor. Especially when this soup is topped with a swirl of coconut milk, chopped basil, and toasted pine nuts.
Autumn is mushroom season, so we might as well capitalize on some delicious funghi. Top off this porcini focused soup with chopped girolles, chanterelles, or oysters and a drizzle of truffle oil.
Butternut squash soup is a fall essential. Right up there with pumpkin spice lattes. Ok, maybe not. But it a beloved autumn dish, and this one is kicked up a notch with garlic and herbs to keep away the vampires.
