I keep wasting the pre-washed salad I keep buying. It’s the one thing I can’t get myself to use. I either forget it’s there because I’m not used to having it in the fridge or I just don’t want it. Ugh, greens. I can’t keep wasting it but I have to find a way to get myself to eat salad. My solution? Kale. Yep, it’s time for kale salads.
Why kale salads? Well, I like kale. So there’s that, but kale doesn’t go bad as quickly as other softer greens. And if it wilts, you can repurpose the kale easily in cooked dishes, unlike say, romaine. A couple of these salads are my absolute favorites and they are my go-to recipes. Mangiona w/ Caitlin Levin #29: Crunchy Greek Salad | The Jungalow – This is my favorite salad of all time. I’m obsessed! It’s a step above Greek salad, just make sure to get the right olives and don’t forget the mint.
Fall Harvest Honeycrisp Apple and Kale Salad | Half Baked Harvest – You don’t have to wait until fall to replicate this salad. Treat yourself to this delicious and seriously beautiful salad for lunch or dinner.
This is Probably the Best. Kale. Salad. Ever | The Coveteur – My other favorite is this easy-to-replicate salad. I love it because it’s easy but it’s also the perfect side salad and the pecorino makes it.
This Roasted Beet and Burrata Kale Salad Is Meatless Monday Perfection | Chow Hound – This is more about the beets than anything else but it’s still considered a kale salad. And a yummy one at that. Honestly, anything with burrata is an immediate win.
Kale BLT Salad | Bon Appetit – Any excuse to eat bacon. Hey kale haters, will putting bacon in your kale salad get you to eat it? If not, just give the rest to me.
Massaged Raw Kale Salad | The Skinny Taste – Literally the easiest kale salad ever. You could make this yummy salad every day. It’s just five ingredients and that includes the dressing.
Parmesan Pistachio Kale Salad | How Sweet Eats – It’s the creamy parmesan dressing with chives and dijon that got me with this one. Gotta love chives! It sounds so satisfying with the crunchy kale and salty pistachios.
Maple & Fitz’s Fig, Grapefruit and Kale Salad | Red Online – I know, figs aren’t as easy to find so this will be a seasonal dish unless you decided to use dried figs. Might work. Either way, this salad with grapefruit and goat cheese sounds so good.
Mexican Kale Caesar Salad with Golden Corn and Quinoa | College Housewife – I almost put a regular kale Ceasar recipe in here but you how to make caesar salad, so just add kale. But this, this is unique! I wouldn’t think to put these ingredients together but it sounds tasty.
White Bean Kale Salad with Tahini Dressing | Minimalist Baker – Talk about a comfort salad, if that’s a thing. It sounds hearty, cozy, and easily crave-able. Perfect for a rainy day (Washington might get rain soon so I’m planning ahead).
