I haven’t decided if I’ll cook or get takeout on Cinco de Mayo but I want to take a break from cooking during this quarantine. I live alone so it will be a solo party. However, If you have roommates or live with your significant other, maybe you want to have your own little celebration complete with margaritas and guacamole. If that’s the case, I have some super easy Cinco de Mayo recipes for you to choose from. I’m giving you ample time to plan your celebratory meal or you can bookmark this post for next year when you can celebrate with your friends.

I’ve mixed in some tried and true favorites with some must-try dishes but the hardest part was choosing drinks. I did a margarita recipe roundup awhile back and was tempted to do it again but had to share my all-time favorite guacamole recipe. You’re going to love it.

What are your plans for Cinco de Mayo? Margarita FaceTime with friends? Taco Tuesday with your fam? Whatever you do, I hope it’s awesome!

The Best Margarita Recipe | Gimme Some Oven – I’m starting with the classic margarita recipe because you can’t have this holiday without a margarita. But this is my go-to. Lime juice, tequila, orange liqueur. Perfection.

Best Guacamole EVER | What’s Gaby Cooking – Here we go folks. This really is the best guacamole ever. I don’t know if it’s the use of lemon AND lime juice or the chives. Either way, it’s so freaking good.

20 minute Caribbean Shrimp Tacos with Roasted Jalapeño Pineapple Salsa | Half Baked Harvest – This recipe feels like summer sunshine, saltwater, and cold beer. Let’s all imagine we’re outside enjoying these tasty shrimp tacos. A dream, right?

Strawberry Basil Margarita Summer Cocktail – Let’s say you don’t want a classic margarita. You want something new and different. Well, here’s your sweet and refreshing strawberry basil margarita.

Crunchwrap Supreme | Delish – Yes, I did put a homemade Crunchwrap Supreme recipe in this roundup. I had this at a friend’s house and it changed. That’s nacho cheese for ya! It’s wonderfully fatty and really easy to make.

Skillet Chipotle Chicken Enchilada Bake | What’s Gaby Cooking – This is a good recipe to have in your back pocket. It’s another easy but delicious one. Also, a crowd-pleaser due to all that saucy chicken and melted cheese.

Smoky + Spicy Mezcal Paloma | All Purpose Flour Child – I find Palomas incredibly refreshing so the fact that we’re bringing smoky and spicy into the mix really freshens up those flavors. Plus, it’s a drink that looks so happy. You can’t lose here.

Life Changing Queso Dip (Mexican Cheese Dip) | Recipe Tin Eats – Guacamole used to be my one true love but I’m feeling the queso. How often do you get to stuff your face with cheese dip? Not often enough, I’ll tell you that! This recipe swears it’s just like restaurant queso, so here you go.

Breakfast Tacos | Honestly Yum – You must have breakfast tacos on a Mexican food roundup. If you plan on starting your solo (or not solo) Cinco de Mayo party early, this is what you need. Plus, it’s two recipes. Steak and eggs and chorizo and eggs.

Korean BBQ Burrito | A Pinch of Yum – Thank goodness for slow cookers. That is the key to making this Korean BBQ burrito so easy! Once the meat is to the desired tenderness, then you can add the delicious kimchi, rice, herbs, and sriracha mayo.
